Sodium Is Essential, but Excess Matters
Sodium supports fluid balance and nerve and muscle function. In many populations, however, average intake is high, and excess sodium can raise blood pressure.
Why Numbers Differ
The U.S. Nutrition Facts label uses a Daily Value of 2,300 mg sodium. WHO recommends adults limit sodium to less than 2,000 mg per day as a population health goal. Individual Needs and Safety
Heavy prolonged sweating can increase sodium loss, while kidney disease, heart failure, high blood pressure, and some medicines can require a clinician-directed limit. Do not self-treat headache, cramps, dizziness, or fatigue with salt; those symptoms have many causes.
Lower-sodium salt substitutes often contain potassium and can be unsafe for people with kidney disease or medicines that raise potassium. Seek professional advice before using one in those situations.

Why does sodium make your weight jump overnight?
This is one way sodium can confuse people who track: the sodium-related part of a rapid scale change is fluid, not body fat.
Sodium is a major regulator of extracellular fluid volume. Eat a high-salt meal and the body may retain additional water while maintaining blood sodium concentration; in a controlled-feeding analysis, higher sodium intake was associated with higher extracellular water. That retained water is real scale weight, but it is not body fat.
The size and duration of the change vary with the meal, carbohydrate intake, hydration, kidney function and the person. A salty restaurant meal can therefore move next-morning weight noticeably without representing a comparable change in stored energy.
Two practical consequences:
Do not interpret a single weight. A jump the morning after a salty meal may reflect water rather than a comparable fat gain, and its timing varies. Reacting to it by immediately cutting calories further risks responding to noise.
Weigh under consistent conditions and read the trend. On waking, after the bathroom, before eating or drinking. A multi-day trend is more informative than any one morning, which can be shifted by fluid and gut contents.
The same principle contributes to the fast scale changes people sometimes see when they sharply change carbohydrate or sodium intake: stored glycogen is accompanied by water, and extracellular fluid can shift before body fat could change by the same amount.
Is the advice to cut salt right for everyone?
The population-level message and the individual case are not the same thing, which is where much of the confusion around sodium comes from.
Salt sensitivity varies substantially. An American Heart Association scientific statement estimates salt sensitivity in about 26% of people with normal blood pressure and 51% of people with hypertension, while stressing that definitions and testing methods vary. It is more common with age and in people with hypertension, diabetes or chronic kidney disease. This is why two people can show different blood-pressure responses to the same sodium change.
Most populations genuinely do eat too much. The World Health Organization recommends less than 2,000 mg of sodium a day, while US guidance uses less than 2,300 mg for teens and adults. If you eat substantial packaged, prepared or restaurant food, reducing the highest-sodium items is usually the useful first move.
Heavy sweat loss is a special case, not a licence for a fixed high-sodium target. Sweat rate and sweat sodium concentration vary widely. Sports-medicine guidance therefore recommends individualising fluid and sodium replacement to measured losses, particularly for prolonged training in heat, rather than prescribing the same extra amount to every athlete. For activity lasting less than about an hour, water and normal meals are generally sufficient.
Potassium also matters. WHO recommends increasing potassium from food because it can reduce blood pressure; vegetables, fruit, legumes and potatoes are useful sources. Potassium supplements and potassium-based salt substitutes are not appropriate for everyone, especially some people with kidney disease or medicines that raise potassium, so those cases belong with a clinician or pharmacist.

How do you actually reduce sodium without food tasting bland?
Since more than 70% of sodium in the US diet comes from packaged and prepared foods, the leverage is not where most people look for it. Reading Nutrition Facts labels makes comparisons between similar products much easier.
Change what you buy before you change how you season. Bread, cured and deli meat, cheese, sauces, stock cubes and ready meals can contribute repeatedly across the day. Comparing frequently eaten products can have more leverage than focusing only on the salt shaker.
Make added salt measurable. Rather than shaking from the container throughout cooking, use a measured amount and adjust only after tasting. That makes the amount easier to log and reduce gradually.
Build flavour beyond salt. Lemon, vinegar, black pepper, chilli, garlic, herbs and ingredients such as mushrooms or tomato paste can make a lower-sodium dish more appealing. The useful combination will depend on the dish and the person.
Rinse tinned beans and vegetables. USDA testing found that draining and rinsing reduced sodium in canned vegetables, although the amount varied and some water-soluble nutrients were also lost. Compare labels because products differ.
Reduce gradually. Salt preference can adapt over time, so step down the highest-sodium foods in stages and reassess taste rather than expecting a specific change by a fixed week.
